Who is craving soup with all these cold days we have been getting? I know I have and one of my favorites is homemade Black Bean Soup. Get your Vitamix out and you will have a tasty soup in just 40 minutes. If you don’t have a Vitamix, get one, because you can make the best soups, dips, dressings and shakes in no time at all, and not much mess. Good old Mexican in a bowl and healthy too.

WHAT YOU WILL NEED

two cloves of garlic

one small onion

one tbsp olive oil

one tbsp ground cumin

two 15 ounce cans of black beans

1/4 teaspoon of salt

two tbsp cilantro (fresh)

one tbsp of chili powder

3 cups of veggie broth

1/2 a jalapeno

One tbsp of Tajin (optional) Can be found at a Mexican specialty store.

juice of half a fresh lime

 

HOW TO MAKE IT

Start by sauteing you diced onion in the olive oil, on med. heat, until translucent

Drain and rinse your black beans

Ready for the Vitamix or blender

Put you black beans in, onion, jalapeno, cilantro, garlic and one and a half cups of Veggie broth and blend. When it starts to thicken add gradually the rest of your broth

once completely blended pour the contents into your saucepan. Slowly heat the soup and adding all of your spices and lime juice to it.

Once it is heated through lower the temp. To simmer for 40 minutes.

Ready to serve. I garnish it in many different ways, sour cream, salsa, avocado, cheese and fresh cilantro are my favorites.

JALAPENO CORNBREAD

WHAT YOU WILL NEED

one cup of buttermilk

two eggs

1/4 cup of corn oil

one 8 oz can of creamed corn

one cup of shredded cheddar cheese

one jalapeno

one cup of cornmeal

1/2 cup of all-purpose flour

1/2 teaspoon baking soda

two teaspoons of baking powder

1/2 a teaspoon of salt

HOW TO MAKE IT

Preheat your oven to 350. Grease an 8-inch square baking pan or cast iron pan.

In a small bowl, beat the eggs. Mix in the corn oil and buttermilk. Stir in the cheddar cheese, creamed corn, and diced jalapenos.( save nine thinly sliced rounds of jalapenos for the top.

In a large bowl, whisk together cornmeal, flour, baking powder, soda, and salt. Stir the egg mixture into the dry ingredients. Mix well. Pour batter into the prepared pan. Top it with your slices of jalapeno.

Bake for 30-35 minutes until golden brown.
